Fresh Garden Salad

 

Ingredients to prepare the salad

  • 2 potatoes cut into cubes
  • 100 gms shelled american corns
  • 1 no pomegranate
  • 2 cucumbers cut into round slices
  • 1 cucumber thick slices stripcut vertically
  • 1 beetroot cut in thick slices cut vertically
  • 1 beetroot grated
  • 1 carrot grated
  • 1 carrot cut into sticks
  • 2 tomatoes cut into round slices
  • 5 leaves Iceberg
  • 2 onions cut in round slices
  • 3 sprigs spring onions chopped
  • orange juice –1 cup (made of three oranges)
  • salt to taste
  • 4 cubes ice
  • 1 no lemon
  • 1 tbsp honey
  • grapes-if available
  • chopped parsley or corainder leaves.

Method :

Step 1

{Boil the potato cubes and sweet corn in a rice cooker  for 10 minutes.Drain & cool.}

Step 2

{Mix one cup of orange juice and 1 tbsp of honey}—for dressing

In a large Oval plate ( or a dish of your choice), spread  two iceberg leaves washed and dipped in ice water.Arrange all around the plate, round slices of tomato & cucumber sliced thinly.In a corner place make a base of Onion , tomato & cucumber slices,sprinkle , very little salt & lemon.On these slices place potato cubes & shelled & boiled corns .Arrange around thi sgrapes ( if available) like a fence, the finely chopped sprigs of onions.Place carrot sticks, diced beetroot,cucumber slices.Arrange another fence of round cut onions tomatoes and cucumber.Add carrot sticks ,sprinkle salt, lemon,chopped coriander leaves/parsely.Dress the salad with orange juice and honey mixture.

Sprinkle pomegranate, spread them  over the dish. Add  the remaining iceberg chopped , and lastly add ice cubes, especially near the  mound of potatoes an corns., which should look like a mountain, surrounded by greeney ( with coriander leaves and parseley over the onion tomato & cucumber round slices) and red pomegranate seeds, looking like rubies.

Chinese Delicacies

  • Schezwan Crispy Chilli potatoes

To prepare the  Schezwan Crispy Chilly Potatoes, you need:

  • 5 medium sized potatoes peeled and cut into wedges
  • 1 cup. Veg cut in thin strips–capsicum, red onions, carrot and French bean only
  • Half a cup spring onions
  • 10 cloves garlic peeled
  • 2 whole red chillies
  • sesame seeds roasted
  • salt to taste
  • schezwan sauce
  • soya sauce
  • red spicy chilli sauce (optional)

Method:

Boil water, add salt, add cut potato wedges, boil for just 1 minute, drain and add corn flour to coat potatoes. Deep fry in oil until crisp. Remove and keep aside.

In a kadhai, half tsp. oil, add garlic cloves and whole red chillies, when garlic turns brown, add red onions(cut lengthwise)saute,add cut vegetables,salt,white of spring onions cut lengthwise,sauces,saute for two minutes, then add fried potatoes, sprinkle greens of spring onions and roasted sesame to garnish.

  •  Schezwan sauce

    Here is a recipe for this delicious sauce with an Indian twist and minimum of ingredients.

    Prep time : 12 minutes

    How to prepare Schezwan Sauce

      Ingredients  required   :

    • 24 whole red kashmiri chillies
    • 10 cloves garlic peeled
    • 3 gms oil
    • 1 tsp vinegar
    • salt to taste

    Method:

    1. Soak the red chillies for 4 hours, cut off the tops and keep aside.
    2. Heat the oil, add the peeled garlic cloves and fry until golden brown.
    3. In a mixer blender, blend the chillies and the browned garlic.
    4. Cook this mixture for 3  minutes on slow heat until all water evaporates.
    5. Add vinegar &   salt  and mix well

    The sauce is now  ready.

Storage tips:

  • If you plan to store the sauce, then add 2 tbspn oil to it and store in a refrigerator.Can be stored for upto 2 weeks in this way.
  • Ensure there is no water in the sauce, before mixing the oil

 

 

 

Burnt Garlic Chicken Fried Rice

How to prepare this innovation of the regular fried rice?

Ingredients you need:

 

  • 2 cups basmati rice
  • 4 cups water for the rice
  • 4 whole red chilli
  • 2 pods garlic (1 peeled only, and 1 peeled and chopped)
  • 1 inch garlic peeled and chopped
  • 6 green chillies chopped
  • 1 cup of  diced vegetables (Capsicum,carrot, french beans)
  • 6 sprigs spring onions  (chopped)
  • 300 gms boneless chicken (diced in cubes)
  • half tbsp. hot red chilli
  • 1/2 tsp chilli flakes
  • 1/2 tsp oregano
  • 2 tsp. soya sauce
  • half tsp . white pepper powder
  • 1 spoon browned onions (optional)
  • 1 tsp Olive oil
  • 1 tbsp refined oil
  • salt to taste

 

Method:

Soak the rice for 20 minutes.Then boil in 4 cups water with salt as per taste, and 2 drops of refined oil.Drain and keep aside.The rice grains should be seperate and long grains.

Marinate the diced chicken for just 15 minutes with salt, white pepper, red chilli powder ,  hot red chilli sauce, and few drops of soya sauce.

In a Wok or Kadhai,take 3/4th tbsp refined oil, add finely chopped ginger, garlic & green chillies, saute, add whole red chillies, then add marinated chicken , fry for five minutes only, next add diced vegetables, saute for five minutes, also add white split portion of spring onions chopped finely, keep the greens aside to be used later.Add salt to taste, soya sauce, saute,add the chilli flakes and oregano, now add rice, fry for two minutes on high flame . Cover with an airtight lid  & cook over low flame for 10 minutes.Put off fire , let it rest.

Now in a small vessel, take 1/4th tbsp of refined oil & 1 tsp. of olive oil, heat , add 10  whole garlic cloves, fry till brown,Give tadka to the cooked rice, add 1 spoon browned onions, and the green portion of spring onions for garnish, Mix  the rice well. Cover for five more minutes.

The dish is ready, enjoy the flavorful burnt garlic chicken fried rice steaming hot served with Chilli Chicken gravy or Chicken Manchurian.

This dish can also be combined with Crispy Schezwan Chilli Potatoes.

Why is this dish called burnt Garlic fried Rice?

The garlic cloves fried in olive oil, give it the flavor of burnt garlic, hence the name.

Chicken Kababs.

 

Ingredients you will need

  •  500 gms .boneless chicken
  •  2 eggs
  • a handful of corainder leaves
  • 6 green chillies
  • 1/2 inch ginger
  • 2 whole red chillies (soaked)
  • 2 slice of bread
  • salt
  • pepper
  • 2 onions sliced
  • bread crumbs made from brown bread (100 gms)
  • 50 gms sesame seeds
  • few sprigs of parseley
  • sesame oil 100 ml.

Method: grind together  chicken, ginger, green chillies , coriander leaves, onions , soaked red chillies, salt and onions. blend and mix make oval shapes.In a seperate bowl keep ready egg dip using egg white, salt and pepper.I another plate take the bread crumbs, add to it 5o gms sesame seeds, salt, pepper and the few sprigs of parsely, roast and crush the parsely, or add fresh.

Dip the kabab into the egg mixture, and roll it in the breadcrumbs mixture. Prepare all , cover and refrigerate for 30 minutes.

After 30 minutes , remove from refrigerater, and heat sesame oil ina kadhai, deep fry the kababs on medium flame, remove and place it on a grill pan once all the kababs are ready, give it a charcoal smoke flavour (This is optional)
